National Pancake Day

National Pancake Day
Having pancakes for dinner on National Pancake Day is basically a requirement. Silver dollar style pancakes are my absolute favorite. I love the edges so a bunch of smaller ones means more edges! When I eat pancakes as a sweet treat, this is what I put on them: I melt a pat of butter in the skillet, I add a bit of brown sugar, as it melts I add sliced bananas, and a splash of rum extract. Basically, it is bananas foster on pancakes. And yes it is as decadent and delicious as you are imagining. If you are going to whip up a batch of pancakes, take a moment to check all your skillets, discard any that can’t be used, donate the good ones you don’t need. And of course, toss any pancake flippers that are melted, warped, peeling, or otherwise unusable.
