Let’s celebrate World Coconut Day with a yummy coconut treat. Do you like coconut? My nephew does. For his 5th birthday I baked him this cake, we names it Chickee Knight. It combined his three favorite things, coconut, chicks, and knights. Can you see the orange wing holding a pipe cleaner sword? The cake is a four layer cake. I dyed the coconut yellow and stuck it to the cake with icing. It was a big hit.
If you like coconut, these are the layer bars I make.
Layered Coconut Bars
I’ve heard these called magic bars; with seven ingredients layered they are also known as seven layer bars. The oven temp is 350 degrees, pan size 9×13, and bake time is 25 minutes until golden brown.
Combine the melted butter with the graham crackers. Press into the bottom of the pan to create a crust. Top with the two cups of chips, I like semi-sweet and butterscotch, but you could use toffee or dark chocolate. Arrange the chopped nuts, I use walnuts, but pecans would be great. Sprinkle on the coconut flakes. Drizzle the sweetened condensed milk across the whole thing. This will act as the glue to hold the layers together. Makes sure to get some around the edges, that will crisp up and be extra tasty.
- 2 cups graham cracker crumbs
- 1 stick (1/2 c) melted unsalted butter
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 cup chopped walnuts
- 1 cup shredded sweetened coconut
- 1 can (14 oz) sweetened condensed milk
These freeze well, I cut them into squares before freezing.
