This pre-made pancake mix makes the very best fluffy pancakes when I am in a hurry. When I have time, I go for my Mom’s best ever pancake batter recipe and cook them on this griddle. Blend these nine ingredients in a bowl until smooth:
- 2 cups all-purpose
- 1/4 cup granulated sugar
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups milk
- 1/4 cup butter
- 2 teaspoons pure vanilla extract
- 1 large egg (beaten)
