Cherries Jubilee Brownies

Cherries Jubilee is a mixture of cherries and liquor, usually Brandy, often flambeed and served over ice cream. On National Jubilee Cherries Day I want to share my box mix brownie recipe for Cherries Jubilee style brownies. You’ll thank me later.

Cherries Jubilee Brownies

1 Box Brownie mix with chips or chocolate chunks included (add in 1/3 cup semi-sweet chocolate chips if your box mix is without chips)

1 (21 oz) can cherry pie filling (divided, reserve 4 tablespoons of the sauce for the icing)

1 (8 oz) container Cool Whip (thawed)

Prepare brownie mix according to package directions. Before baking swirl in the can of cherry pie filling (less the reserved 4 tablespoons of sauce) and 1/3 cup chocolate chips if your package mix didn’t have them in the mix. Bake as directed, timing to get the toothpick inserted in the center to come out clean may be a few minutes longer. Once cooled, blend the reserved cherry pie filling sauce into the Cool Whip and ice only the brownies you plan to serve. Serve and eat immediately. Un-iced brownies can be stored or frozen.
